David Chang: Restaurants May Not Survive Pandemic
David Chang, the well-known chef and restauranteur of Momofuku Noodle Bar fame, isn't known for keeping his mouth shut — especially in his kitchens and especially now that the COVID-19 crisis is endangering restaurants all across America.
In a candid interview with The New York Times Magazine, he unloads on Trump, the federal response to coronavirus, and the very precarious state of the industry.
"It’s as if aliens came from outer space and decided to totally destroy restaurants," he says. "I do not want to incite panic and hysteria, but I think for restaurants and the service industry, there is going to be a morbidly high business death rate. My fear is the restaurants that survive are going to be the big chains, and we’re going to eradicate the very eclectic mix that makes America and going out to eat so vibrant and great."
